my polish grandmother, josephine, is an amazing baker and cook (she is beautiful, 86 years young and living strong). she is old school, very few of her recipes are written down, most are by memory. so I was pleasantly surprised to receive a few favorite recipes. this one for coffee cake is so easy breezy, delish, and leaves your house to smell of warm cinnamon sugar. you can add in any seasonal fruit or berry you may have on hand. today we had cranberry…pictured with my little thanksgiving trees and enjoyed with an iced latte, on this gorgeous day.  na zdrowie! josephine’s coffee cake

1 3/4c sugar, divided
1/2c margarine (or 1 stick butter) softened
1 egg
1c buttermilk or 1c milk, plus 1 tbsp vinegar
2c all purpose flour
1/2tsp salt
1tsp vanilla extract
1 1/2c diced fresh or frozen cranberries (original recipe calls for rhubarb, I’ve also done berries= delish)
1 1/2c chopped walnuts, optional
1/2tsp ground cinnamon

preheat oven 350 degrees
cream 1 1/2c sugar and margarine together until smooth. stir in egg and buttermilk. combine dry ingredients; add to creamed mixture. add vanilla, cranberries and nuts, mixing well. pour batter into greased 13x9x2 baking pan. combine 1/4c sugar and cinnamon; sprinkle on batter. bake for 45 minutes.
